This book is about cod; not just ‘any old’ cod, but Atlantic Cod, the species of cod that is fished off the shores of Newfoundland and Labrador. In total, the compilation includes 125 recipes, obtained from a number of sources, including cookbooks published in the province, as well as websites and blog spots, written by ‘locals.’ The purpose of the cookbook is to show that there is more to cod than just ‘fish and chips.’ While other fish, such as pollack and haddock are often used to make this traditional meal, cod is typically the fish of choice, especially in Britain where fish and chips are sold on just about every corner in the local ‘chippy’ shop. As you will read, cod is such a versatile fish it can be used to make a myriad of different dishes that can be served at different times of the day, for example from appetizers to soups, as well it can be cooked using a wide variety of different techniques, such dishes in which the cod is baked or steamed, and since Newfoundlanders and Labradorians have never been ones to waste any food, you will read how virtually every part of the fish can be eaten (e.g., from Snout to Tail). In addition, because cod has become so popular around the world, there is even a short section that highlights recipes that have an ‘international’ twist, including recipes from Jamaica to Japan.
